The Premier Tim Mälzer Ham Knife 24cm is manufactured by the Japanese brand KAI, in Seki, Japan. This astonishing knife was inspired and designed by the famous German TV Chef: Tim Mälzer, in order to meet the needs of professional chefs around the world.
Its thin, long blade helps you slice with great precision almost every type of meat ! Furthermore, the blade is made of 32 layers of stainless damask steel that are embellished with Japanesehand-hammered surfacecalledTsuchime.
This process is what gives the blade its original and wavy look. The core of the blade is made of VG10 steel that has been hardened to 61 degrees in the Rockwell scale. Thus, the knife keeps his sharp edge for a long time !
