32 Dumas AFFIL Pastry Knife 28cm – Triple Riveted Handle

  – N: Nitrogen – for reinforcing the blade

Thanks to the combination of the elements mentioned above, the blade attains a hardness rating of 57/59 HRC on the Rockwell scale. This is a pretty impressive score for a blade in this price range. Therefore, this blade is durable in the long run, and it is very easy to sharpen. 

Meanwhile, the handle of this blade is made of POM. It is very comfortable to hold, and your fingers are always secured from slips thanks to its finger guard. The handle is further secured by three brass rivets.
